Oh happy day!  The hubby is at the races and I’m home alone enjoying this gorgeous day!!!  Do I feel guilty for enjoying a day to myself?  Nah!!!

Here’s a yummy cocktail I came up with before heading outside to enjoy the sunshine and perfect weather.  Look at the beautiful color from the Chambord and fresh raspberries!  If you shake this really well, the pineapple juice makes this really thick rich foam which takes this cocktail to the next level!   And it’s so delicious!!!

Raspberry Delight

2 oz. Vodka
2 oz. Raspberry liqueur (I used Chambord)
2 oz. Pineapple Juice
10 Fresh Raspberries plus more for garnish

Add the raspberries to the shaker and use the muddler to mash them up.  Add ice to the shaker then add vodka, raspberry liqueur and pineapple juice.  Shake well and strain into martini glass.  Hint: I used the hawthorn strainer and fine mesh strainer because the raspberry seeds will clog up the strainer that is attached to the cocktail shaker.  Garnish with raspberries or you could use a pineapple wedge if you have one.  I highly recommend this one!!  Cheers!
