Did you know that a classic daiquiri is not a blended drink?  That came as a surprise to me.  I thought daiquiris were those fruity, slushy drinks that you get out of a big machine at a bar or restaurant.  Those slushy drinks taste good, but you really need to try a classic daiquiri.  I was very pleasantly surprised at how delicious and refreshing this drink is.

This drink has likely been around for several hundreds of years. To prevent scurvy Pirates drank a concoction that had these same ingredients.  In 1896 there was an American named Jennings Cox who was living and working in Cuba.  He was entertaining some friends and ran out of gin.  He went out to get some more booze and bought the cheapest alcohol he could find which was rum.  He concocted a punch using the rum to serve his friends. They liked it so much and asked him what it was called.  He called it a Daiquiri after a nearby beach. He wrote the recipe down and indicated that the punch contained lemon juice, but lemons would have been unheard of in Cuba at the time so it had to be limes in the punch.

This drink should be served in a chilled coupe (pronounced  coo-pay) glass.  But if you do not have a coupe glass, you could use a martini glass or some other small glass.  I’ll provide a recipe below for a 4 oz. and 6 oz. serving.  This is a sipping drink, not something that you’d want to gulp down gallons of.  It’s tastes fantastic and is so smooth but it’s very potent so be careful not to turn into a pirate.  Aaaarrrrgggg!

4 oz. Serving

2 oz. White Rum
1 oz. Lime Juice
1 oz.  Simple Syrup

6 oz. Serving

3 oz. White Rum
1.5 oz. Lime Juice
1.5 oz. Simple Syrup

In a cocktail shaker filled with ice add the rum, fresh lime juice and simple syrup. Shake really well (20-30 seconds).  You want the ice to slightly melt and impart water into this drink to help balance the acidity.  Strain into a chilled glass and garnish with a lime wheel or lime peel.  Cheers!

Do you enjoy a really good Old Fashioned?  Well here is the recipe plus some tips for making this the classic way.

  1. Use good quality whiskey.  It doesn’t have to break the bank but it should be something in the mid–range that is smooth.  Rye was the original alcohol used in this drink, but over the year bourbon whiskey has become more popular.
  2. The original recipe called for a cube of sugar but simple syrup works very well since it does not have to be muddled to get it to dissolve.  But please, I say PLEASE don’t dump one of those packets of sugar that you get in restaurants into the glass.  That would just be blasphemous.
  3. Use 2-3 dashes ONLY of bitters.  You can use Angostura or Orange Bitters.  Either works well here.  No more, no less.
  4. Don’t add soda water!  Soda water is being used in some bars but this definitely not classic.  If you really like it that way, go ahead, but just know that’s not the right way.  It should be still water if you really need to add water.  Don’t forget this is a sipping cocktail, not a chugging cocktail so the ice is going to dilute over time so you really do not need to add water unless you want to.
  5. Cherry – please don’t use one of those bright red cocktail cherries. Those are for tropical cocktails, not for this lovely, sophisticated drink.  Please use something a little more high brow like a Luxardo cherry.  If a Luxardo cherry does not make the eyeballs roll into the back of your head, I don’t know what will!  They are simply the most amazing cherries on Earth.  And don’t muddle the cherry.
  6.   Large ice cubes are better if you have them.  They melt slower so it won’t dilute the drink as fast.
  7.  A shaving of orange is good if you have one or you can put an orange wheel on the rim.
  8. This drink is never shaken, it’s always stirred.

Recipe:

2 oz. Good Quality Bourbon Whiskey
.5 oz. Simple Syrup
2-3 dashes of bitters

In an Old Fashioned glass (short glass) put a large ice cube in the glass.  Add the whiskey, simple syrup and bitters. Using a bar spoon, gently stir the cocktail.  Garnish with a Luxardo cherry and or orange if desired.  Cheers!

July 10th is national Pina Colada Day so Happy Pina Colada Day!

Let me tell you, this is a fantastic recipe!  It’s sweet, creamy, has the perfect balance of pineapple and coconut and really packs a punch!!  This is so much better than any Pina Colada you would be served on vacation.  It’s all the real and good stuff and nothing watered down!

1 Serving:

2 oz. Coconut Rum
2 oz. Pineapple Rum
2 oz. Pineapple Juice
2oz. Coconut Cream

You can either use a blender or cocktail shaker.  So either put ice in a cocktail shaker or blender, then add both rums, pineapple juice and coconut cream. Shake/Blend really well and pour into a tall cocktail glass.

4 Servings:

1 Cup Coconut Rum
1 Cup Pineapple Rum
1 Cup Pineapple Juice
1 Cup Coconut Cream

This one is probably better to do in a blender.  So just all all the ingredients with ice in a blender and blend well.  Pour into glasses and garnish as desired.

This drink is delicious and surprisingly refreshing. Cheers!

Ingredients:

2 oz. Bourbon
.5 oz. Maple Syrup
1 Whole Orange cut up into slices
Champagne

Add the orange slices to the cocktail shaker.  Muddle the orange in the shaker cup to get all of the juices released.  Add ice, bourbon and maple syrup.  Shake really well to make sure that the maple syrup is fully dissolved.  Strain into a short cocktail glass filled with fresh ice.  Top off with champagne and add garnish. For garnish you could do an orange wheel, mint or whatever you have on hand that you like.

Is there anything better than sitting on a beautiful beach with your toes in the sand and drink in hand?  Well I can’t help with the beach part, but I can give you a delicious recipe to make the best Bahama Mama you will ever try!  Please watch the short video for details. 1 oz. Simple Syrup

Anyone remember the Alabama Slammer?  This would have been a staple at Crimson Tide tailgate parties (maybe still is?).  It’s fruity, delicious and packs a punch!

Please do not try to substitute regular gin for Sloe gin.  Sloe gin is different.  It is a sweet gin based liqueur that is flavored with blackthorn plums and is not gin.  It is aged in barrels and has a red color.

Recipe:

1 oz. Southern Comfort
1 oz. Amaretto
1 oz. Sloe Gin
2 oz. Fresh Squeezed Orange Juice

In a cocktail shaker filled with ice add the southern comfort, sloe gin, amaretto and orange juice.  Shake well and strain into a high ball glass filled with fresh ice.

Ya’ll!  As I write this, it is so hot outside.  Too miserable to go outside.  I feel for those who have to work outside.  I have no idea how they do it in weather like this.   Anywho, I was looking for a recipe to try my new Western Son Prickly Pear Vodka, but I couldn’t find anything online.  So I came up with my own recipe.   And let me tell you….it’s REALLY REALLY dang great.  This would be fantastic to serve for 4th of July!!

2 oz. Prickly Pear Vodka
2 oz. Cranberry Juice
1 oz. Fresh Lemon Juice

In a cocktail shaker filled with ice add the vodka, cranberry juice and lemon juice. Shake well and strain into a glass with fresh ice.  Garnish with a lemon wheel and rosemary if desired.  The Rosemary is quite nice (even though I had to suffer going outside to get it).

I’d love to know your thoughts if you try this.  It’s a really unique and interesting flavor.  And of course I drank it down really fast but now I’m enjoying drinking the melted ice which still has the drink’s flavor on them.  It’s so good!

mojito, cocktail, drink-814042.jpg

For an in depth quick tutorial for the best way to make mojitos, watch the video.

Ingredients:

2 oz. White Rum
10 mint leaves
1 oz. Fresh Lime Juice
1/2 to 1 oz. Simple Syrup (depending on tartness of limes)
2 oz. Soda or Sparkling Water

I. Remove about 10 mint leaves from the stem and place in the palm of your hand and spank it. Then rub the mint around the rim of the glass before placing the mint leaves at the bottom of the glass. Lightly muddle the mint. Then add ice all the way to the top of the highball glass. Add rum, lime juice and depending on the tartness of the limes add 1/2 oz. to 1 oz. of simple syrup, add soda water and use a bar spoon to mix all the ingredients well and distribute mint leaves. Garnish as desired.

II. Put ice in a highball glass and cocktail shaker. Remove about 10 mint leaves from stem and place mint in the palm of your hand and give it a smack. Rub the mint around the rim of the glass and then place the mint in the cocktail shaker. Add rum, lime juice and simple syrup to the shaker. DO NOT ADD CARBONATED beverages to the cocktail shaker!! Shake and strain into the glass. This removes all the mint so you do not get mint in your mouth but there is plenty of mint essence in the drink from shaking it with ice. Then add the soda water to the glass and stir. Garnish and Cheers!
