Ingredients:
2 oz. White Rum
10 mint leaves
1 oz. Fresh Lime Juice
1/2 to 1 oz. Simple Syrup (depending on tartness of limes)
2 oz. Soda or Sparkling Water
I. Remove about 10 mint leaves from the stem and place in the palm of your hand and spank it. Then rub the mint around the rim of the glass before placing the mint leaves at the bottom of the glass. Lightly muddle the mint. Then add ice all the way to the top of the highball glass. Add rum, lime juice and depending on the tartness of the limes add 1/2 oz. to 1 oz. of simple syrup, add soda water and use a bar spoon to mix all the ingredients well and distribute mint leaves. Garnish as desired.
II. Put ice in a highball glass and cocktail shaker. Remove about 10 mint leaves from stem and place mint in the palm of your hand and give it a smack. Rub the mint around the rim of the glass and then place the mint in the cocktail shaker. Add rum, lime juice and simple syrup to the shaker. DO NOT ADD CARBONATED beverages to the cocktail shaker!! Shake and strain into the glass. This removes all the mint so you do not get mint in your mouth but there is plenty of mint essence in the drink from shaking it with ice. Then add the soda water to the glass and stir. Garnish and Cheers!
